I don't get it. Why didn't they use the word 'Overlord'? Its perfect.

I think it is a combo of two things:
1. He doesn't want to sully the name of Nazarik, so calling himself an Overlord, or a king of kings, while establishing his country would make him and his land seem rather full of themselves.

2. The type of undead that he is apperantly is called an Overlord Skeleton in game. So it also or otherwise might be because it would feel too much like titling yourself "Human Hmmmmm..........."
